The December–April window is the island’s fullest — whale season, holidays, snowbird season stacked together. Holiday tables are the first dates to go.
The holiday booking window
Christmas-week and New Year dinners book six-plus weeks out in normal years. The price stays the published card — CORE $150–$225 a guest — but the calendar does not wait. A 50% deposit locks the date, after you have seen the written quote.
The menu register
Holiday menus lean on the island’s own season: Hāmākua mushrooms, ranch-country beef, the first of the winter citrus. Traditional formats — the roast, the goose, the whole fish — are all on the table, literally.
Questions, answered
No holiday multiplier exists on the published card. Peak dates book out; they do not mark up. Any premium for a specific date appears in the written quote, plainly.
