We crew the house properly or we do not take the night. A published band is not a live calendar. Signature sits at $210–$325 a guest — groceries inside that band. ENTRY from $165 when the kitchen and the list fit a shorter night. Stay Chef from $1,450 a day, groceries at cost with receipts.
After either line: 20% service and Hawaiʻi GET up to 4.712%. A 50% deposit holds a date only after we can staff that week. Gratuity is never required. Ironman and other event weeks compress the calendar — flag those dates on the inquiry.
East side is a different day, never a same-afternoon add-on from town. Named Kona coffee follows origin-labeling rules; we do not invent farm names. Hotel rooms without a cooktop are declined.
