One menu that reads like the island’s map: ranch country, the Hāmākua coast, the cold-water boats, the coffee belt. Farm names appear only when the produce verifiably came from that farm.
The courses and their sources
Provenance is a promise with a paper trail. If a source is out of season, the menu names the substitute honestly — or drops the course.
- Hāmākua mushrooms — grown on the wet side, seared hard
- Kona Cold lobster — when the boats ran; the menu says when they did not
- Parker Ranch beef — Waimea’s ranch, the island’s herd
- Waimea strawberries — the upcountry crop
- Kona coffee finish — 100% Kona, origin law respected
Price and tier context
The provenance menu runs PREMIUM ($190–$275 a guest) as standard; a shortened arc fits the top of CORE. Kona Cold lobster and out-of-season requests move the quote, and the quote says so.
