The default villa dinner — starter, main, dessert — written after your menu call and the chef’s morning shop. CORE band: $150–$225 a guest, groceries inside.
A representative arc
Menus are written per booking, not laminated — provenance lines name the farm only when the produce verifiably came from it.
- First — Hāmākua mushroom tartine, or the day’s fish crudo with lilikoʻi
- Main — Parker Ranch beef or Kona Cold lobster when the boats ran
- Finish — Waimea strawberry, or a Kona coffee dessert
Price and tier context
Inside the CORE band the menu moves with protein and course ambition. ENTRY (from $110) simplifies the arc; PREMIUM ($190–$275) extends it. Dietary flags apply across all tiers at no surcharge.
How service runs
Shop that morning, cook in your kitchen, plate and serve each course, leave the kitchen clean. Three courses typically span ninety minutes at the table.
Questions, answered
The menu is written after booking from your call and the market week — you approve it before service day. A sample arc comes with your quote.
Mixed tables are standard: the vegan arc runs parallel, labeled, at the same tier. No surcharge, separate prep.
