The eleven flags
Vegan, vegetarian, gluten-free, dairy-free, nut-free, shellfish-free, keto, paleo, low-FODMAP, halal-conscious, and celiac protocol. Flags are set in the quote fields, confirmed on the menu call, and labeled at the table — the chain is documented, not verbal.
Allergen discipline
Anaphylactic allergies and celiac protocol get separate prep surfaces and dedicated oil. Where a rental kitchen cannot support a protocol safely, we say so at quote stage — that conversation is free and it is final.
No dietary surcharge
The published bands apply to every flag. If a protocol moves grocery cost materially, it appears at cost with receipts — a receipt is a fact, a surcharge is a choice, and we do not make that choice.
Questions, answered
Yes — mixed tables are the norm, especially reunions and retreats. Each plate is labeled; nobody announces their diet to the room.
