Signature dinners: food in the band. Stay Chef: groceries at cost.
Two honest answers depending on the product — signature dinners keep food inside the published band; Stay Chef bills groceries at cost with receipts.
Dinners: inside the band
On per-guest service (ENTRY from $110, CORE $150–$225, and up), groceries are inside the band. The price you approved includes the food — that is the point of a per-guest price. Hawaiʻi groceries run roughly 31–53% above mainland prices; the band absorbs that, not you.
Stay Chef: at cost, with receipts
Multi-day service bills groceries at cost because a week’s shopping honestly varies with your table. The chef shops, you pay what the market charged, and receipts are available on request — every one, itemized.
Why this is unusual
The market norm is “food cost separate from hourly labor,” settled after the event. An all-in band or an at-cost pass-through with receipts are the two structures that cannot surprise you; we run only those two.
Questions, answered
Always — on request, every receipt, for any booking. Groceries at cost only works as a promise if it is auditable.
