East-side service is not a surcharge and not a refusal — it is a written quote that shows you the Saddle. Here is exactly why, and what it costs.
The geography, stated
Kona to Hilo is 2.5–3 hours over the Saddle; Volcano runs 2 hr 20 min and up; Waimea is 60–75 minutes. A crew cannot dodge that drive, so we price it as a readable line instead of inflating the per-guest rate for everyone.
What stays identical
The food prices off the same published card — CORE $150–$225 a guest, ENTRY from $110, staffing $55/$75 hourly. The quote adds only the logistics: crew travel time, and for multi-day work, a residence arrangement that usually beats daily drives.
When east-side service makes sense
Events of a dozen guests and up, retreat programs of three days and up, and Stay Chef weeks all price well east-side. A dinner for two in Hilo from a Kona crew is the honest exception — the quote will show you why, and we will say so.
Questions, answered
Same-day east-side requests, yes — a crew cannot cross the Saddle responsibly on a few hours’ notice. With lead time, east-side service is regular work.
