Plated reception service runs the CORE band ($150–$225 a guest) with a server per ten to twelve and a sous chef above twenty — $55 and $75 an hour, four-hour floor. Family-style drops the staffing count; stations re-shape it. The quote maps crew to format.
Against the ballroom
Resort receptions on this coast carry $7,500–$15,000 F&B minimums and 23–25% service. An estate reception at from $150 a guest with 20% service itemized is the same caliber of table without the structure charge.
