The weather plan.
One island, two climates: 9–12 inches of rain a year on the Kona coast, 100+ in Hilo. Outdoor service is planned per side of the Saddle, not per wish.
West side: the default is outside
The Kona–Kohala coast is one of the driest resort zones in the state. Outdoor tables are the default, and a backup is still written into every event spec — usually the covered lanai three steps away.
East side: the backup is the plan
In Hilo and Volcano, covered service is designed first and the open-air version is the upgrade when the sky allows. This is not pessimism; at 100+ inches a year it is just reading the climate.
Wind, and the decision point
Trade-wind afternoons affect exposed coast tables more than rain does west-side. Every event spec carries a decision time — typically midday — when the setup commits to plan A or plan B, with the call made on the forecast, not hope.
