The arithmetic
Resort F&B minimums on the Kohala Coast run $7,500–$15,000 per event with 23–25% service charges. A 60-guest estate reception at $200 mid-band runs $12,000 for food with 20% service itemized — the same spend, but every dollar is food and crew, not a minimum you had to hit.
What an estate needs
A real kitchen (or room for a field kitchen), event permission from the property, power and water access, and a rain plan if any service is outdoor. We audit all four before quoting — the audit is free and the honesty is the point.
